Thai Massaman Chicken

Free-range chicken with sweet & baby potato.

Our Massaman chicken curry is an authentic version of a favourite in homes of southern Thailand. We make ours with a Massaman curry paste made in our own kitchen and using high welfare Irish free-range chicken. With sweet potato and organic potato in there too, this is a meal all by itself, but if you like you can cook up some rice or choose from our rice dishes in the side dishes section.

Ingredients

Irish Free Range Chicken, Coconut Milk, Unsalted Peanuts, Coconut Palm Sugar, Ginger, Fish Sauce, Sweet Potato, Organic Potato, Cardamom Pods, Pineapple Juice, Red Shallots, Tamarind, Mace, Red Chillies, Cinnamon, Clove, Coriander Seed, Fresh Coriander, Cumin Seeds, Galangal, Garlic, Nutmeg, Lemongrass.

Nutrition & Portions Explained

350g A large portion is appropriate for a healthy & active adult with a good appetite or maybe for two lighter eaters to share.

250g A medium portion is designed to meet the Recommended Daily Allowances for each ingredient and would be appropriate for teenagers to adults.

This dish contains a lot of plant-based saturated fats due to the high content of coconut milk. It is okay to indulge occasionally but you should ensure attention is paid to your total saturated fats intake over the day and week.

Serving suggestion

This is perfect with Jasmine rice. 

Cooking & Serving Instructions

These cooking instructions are only a guide. Your appliance may have a different set of power ratings. Adjust accordingly. Make sure your food is piping  hot (>70°C) before serving.
For best results use your Microwave oven

Puncture the cellophane several times before placing in micro-wave.

From Frozen:Use the  Defrost Program or low power  for about  12 minutes. Shake or stir the contents and then return at high power for 2/3 minutes more to ensure that it is piping hot. 

Defrosted: Reheat on high power setting for 2/3 minutes

On the Hob: Transfer contents to saucepan and heat slowly until piping
hot. Remember to add water to prevent the sauce drying out.

Conventional Fan Oven: Preheat oven to 200ºC. Puncture the cellophane several times before placing in oven for about 25 mins. If defrosted, reduce cooking time to 15 minutes.

*As many of our dishes as possible are made without the most common allergens, for instance, we use cornflour instead of wheat flour in our sauces. While we make dishes that are wheat, nut and dairy free, we do handle these products in our Kitchen.
