Persian Style Nut Loaves

Persian-style nut loaf with pistachios and roast root veg.
This is a gorgeous Middle Eastern take on the nut loaf. Using a base of Bomba rice and Chickpeas cooked up in our own vegetable stock, we combine them with roasted root veg, toasted pistachios, dried apricots and a blend of middle eastern spices. We've made them into little loaves so they are great individually as daytime snacks or all together as a main meal. Suitable for Vegans.

Ingredients
Carrot, Sweet Potato, Parsnip, Pistachio Nuts (tree nut), Red Onion, Chickpeas, Bomba Rice, Dried Apricots (Sulphites), Vegetable Stock (Celery), olive oil, Fresh Coriander, Saffron, Cinnamon, Coriander Seeds, Cumin Seeds, Sea Salt, Black Pepper.

This 300 g of two loaves is appropriate for a healthy & active adult with a good appetite or maybe for two lighter eaters to share.
Serving Suggestion
Serve with a side of salad and if you fancy a dollop of sour cream with some lemon zest.
Cooking Instructions
These cooking instructions are only a guide. Your appliance may have a different set of power ratings. Adjust accordingly. Make sure your food is piping hot (>70ºC) before serving.
For best results use your conventional oven
Conventional Fan Oven Preheat oven to 175ºC. remove from the pouch before placing in oven on a baking tray for about 25 mins or once the coating has turned golden. Defrosted: reduce cooking time to 15 minutes.
Microwave Oven Do not use microwave oven
