Fresh free-range pork shoulder, sourced from Kildare, cooked slowly over low heat for hours to allow the meat to become so tender it's ready to fall apart and absorbs the flavours of the peppers and paprika. Serve up with long grain brown rice or crunchy roast potatoes from our side dishes.
