Rogan Josh with monkfish, flash cooked in aromatic Kashmiri spices.
Rogan Josh, which roughly translates to “red heat,” is a classic dish from Kashmir, which we prepare from scratch, here with Atlantic monkfish and chopped tomato. We have gathered all the authentic herbs, spices and fresh ingredients and prepared them according to traditional methods to give you a really healthy and seriously tasty Indian experience. We use our own Indian vegetable stock and we make the coconut yoghurt in our kitchen too.
Ingredients
Onions, Fresh Monkfish (Fish), Mixed Peppers, Coconut Yoghurt, Tomato Puree, Ground Almond (Tree nuts), Our Garlic & Ginger Paste[Garlic, Ginger, Water], Vegetable Oil, Kashmiri Chilli Powder, Coriander Seeds, Ground Turmeric, Fennel Seeds, Mace, Bay Leaf, Cinnamon, Cloves, Black Cardamom Pods, Sea Salt, Black Pepper.

350g portion is appropriate for a healthy & active adult with a good appetite or maybe for two lighter eaters to share.

Serve with our side of rice and some nan bread.
Cooking Instructions
These cooking instructions are only a guide. Your appliance may have a different set of power ratings. Adjust accordingly. Make sure your food is piping hot (>70ºC) before serving.
For best results use your microwave oven.
Microwave:
Puncture the cellophane several times before placing in microwave
From Frozen : Use the Defrost Program or low power for about 12 minutes. Shake or stir the contents and then return at high power for 1/2 minutes more to ensure that it is piping hot.
Defrosted : High Setting for about 3/4 minutes
On the hob:
Transfer contents to saucepan and heat slowly until piping hot. Remember to add water to prevent the sauce drying out.
Storage:
Store at <-18ºC If defrosted, refrigerate at <5ºC & eat within 24hrs
