Free-range pork tenderloin in a panko coating seasoned with parmesan & thyme.
We use only free-range Irish pork for this classic northern Italian way of serving lean loins of pork. It's very much a south of the Alps, Italian version of German Schnitzel. We marinate the loins in olive oil, fresh thyme, and oregano and then tenderise the meat before coating it in free-range egg and panko crumb mixed with freshly grated parmesan, oregano, thyme, freshly cracked black pepper and garlic salt. That's a lot of love and it shows in the flavour - who knew pork could be such a joy.
Serve it up this summer with our roast potato slice and some freshly prepared green salad. Alternatively, order a pot of our Piquant Tomato Sauce, or you could try it with our delicious Braised Red Cabbage and one of our Mashed Potato options.

On the hob
From Frozen : Pre-heat some oil in a frying pan over a low/medium heat. Fry the meat gently for about 8/10 minutes each side until golden brown.
Defrosted : Pre-heat some oil in a frying pan over a medium heat. Fry the meat gently for about 4/5 minutes each side until golden brown.
On the grill
From Frozen : Pre-heat the grill at medium heat. Cook the meat gently for about 7/8 minutes each side until golden brown.
Defrosted : Pre-heat the grill at medium heat. Cook the goujons gently for about 5/6 minutes each side until golden brown.
Store at <-180C
If defrosted, refrigerate at <50C & eat within 48hrs
